The word “superfoods” hasn’t quit made it to the dictionary yet, but they are becoming more popular each day and much easier to find in grocery stores. They are loaded with nutrients and health promoting properties and they are packed with antioxidants, healthy fats, fiber, phytochemicals, and polyphenols. Superfoods promote good heart health, cancer prevention properties, lower the risk of developing certain diseases such as obesity, high blood-pressure, and diabetest to name a few.

Eating a well-balanced diet, rich in superfoods will improve immune system health and longevity. Here are 5 fabulous superfoods you should be eating more of!

1. Amaranth 

Amaranth is an ancient grain high in calcium, iron, magnesium, potassium, and phosphorus. In fact, amaranth is one of the only grains that contains vitamin C and amino acid lysine, which is unheard of in other grains. Amaranth is gluten-free and often popped as popcorn, but it can also be boiled, sprinkled on salads, added to soups, and used in baked goods like cookies. One study found that a diet containing amaranth helped lower triglycerides, as well as LDL (the “bad” cholesterol) and total cholesterol in patients who suffered from coronary heart disease and hypertension.

2. Dandelion Greens 

Dandelions are more than just a fun little weed, they have actually been a main source of ancient medicine that has helped treat fevers, heartburn, and liver problems. And they are now being recognized for their nutritional benefits. Dandelion greens are low in calories, saturated fat, and cholesterol, and they contain a great source of copper, fiber, folate, magnesium, and phosphorus, as well as Vitamins A, B6, C, and K. Cauliflower can be eaten raw,grilled boiled, baked, mixed into soups, salads, and even added as a pizza topping.

5. Teff

This tiny little grain is a nutritional powerhouse and loaded with protein, fiber and vitamin C. Teff has the highest calcium content of all grains and to top it off it’s gluten-free. It has a certain type of dietary fiber that may help promote blood sugar health, weight loss, and colon health. Teff can be ground into a flour and used in many baked goods, it can be eaten raw, boiled, baked, steamed and even sprinkled over meals.
