Cucumber: Cucumber skins can boost your levels of calcium, phosphorus, magnesium and potassium as well as vitamins A and K. It’s also where most of their antioxidants are held. So, next time you’re snacking on a cucumber, leave the skin on.

Eggplant: Eggplant skins are packed with the antioxidant, nasunin, an essential nutrient needed for maintaining healthy brain tissue. It is also believed to help manage weight, has anti-cancer, anti-aging and anti-inflammatory properties.
