Lecithin is a complex fatty substance found in all animal and plant tissues which is composed of phosphoric acid, sterols, carbohydrates, fatty acids, glycerol, glycolipids, sphingolipids, phospholipids (e.g., phosphatidyl choline, phosphatidyl ethanolamine, phosphatidyl inositol, and phosphatidyl serine), and various other compounds. Lecithin is naturally found in foods, especially fatty foods such as egg yolk, soybeans, nuts, wheat germ, fish, legumes, and peanuts. It is also present, to a lesser extent, in foods like yeast, grains, bee pollen, cauliflower, and cabbage.

A key component of lecithin, phosphatidyl choline, is the main lipid component in both plant and animal cellular membranes. Every cell of your body contains phosphatidyl choline. Phosphatidyl choline is responsible for maintaining the surface tension of the cell membrane. Without enough phosphatidyl choline, the cell wall hardens and does not allow enough nutrients in or wastes out. This means premature aging and death of cells.

Our bodies can manufacture phosphatidyl choline in the liver when we are healthy and all the required raw materials are found in our diet. Phosphatidyl choline production in the body typically declines with age, however, and many people’s diets are not ideal. Lecithin supplementation has therefore been found to convey numerous benefits that stretch into every cell, organ, and system in the body.

Phosphatidyl choline breaks down into choline when lecithin is consumed. Choline can be synthesized in the liver when vitamin B12 and folic acid (vitamin B9) interact with the essential amino acid methionine.
